Teuscher Champagner Trüffel: Herstellung und Geschichte

Mehr als 80 Jahre ago in a small town in the Swiss Alps, a master chocolate maker embarked on a path that would make him one of the world’s greatest chocolatiers, and thus begins our story. In 1932, Dolf Teuscher and his wife opened up shop for a brief time before moving their business to Zürich. From humble origins, our kitchens in Zürich today make more than one hundred varieties of chocolate using these original recipes that have passed from father to son.

Die Gründung und Entwicklung des Hauses Teuscher

It all started with a small bakery and confectionary in the Tösstal valley. The inventor's son, Dolf Teuscher Jr., who is helming the family business today, in the New York Times: "My father got the idea during a heatwave, which is a confectioner's nightmare.

Whenever I would pass by the original store on Storchengasse, it seemed incredibly colorful and inundated with delicious looking chocolate treats. The original outlet at Storchengasse with its large windows has a different vibe than the newer outlet on the Bahnhofstrasse shopping mile. The former is inside a building from 1647 where various shops have been operated. This is also my favorite Teuscher outlet because it fits in with the cobblestone alleys of the old town.

Marzipan, Gianduja und Pralinenfüllungen

The Italian word “gianduja” refers to a filling of finely ground nuts and chocolate, resulting in a very smooth texture with pronounced nutty flavor. The Teuscher marzipan is made from 2/3 almonds (or pistachios or walnuts) and 1/3 confectioner’s sugar. Most other marzipan are sweeter and cheaper. Our praline filling has the same ingredients as the gianduja; the difference is in the process. Sugar is melted and almonds are mixed in. Caramel: chewy and buttery caramel made with fresh cream and regular sugar.

Die Entstehung der Champagner-Trüffel

In the summer of 1947, a heatwave struck Switzerland - a veritable nightmare for a chocolatier. He saw two Champagne buckets sitting on the top of a glass cabinet. That night, he dreamed of the buckets and saw himself making Champagne truffles and selling them like crazy. The resulting confectionery is called a "truffle" because its size and shape resemble the black fungus which pigs dig out of the ground.

The Swiss confectioner's signature confections are Champagne Truffles, the first of its kind. They are made with champagne, butter cream, and surrounded by dark cream ganache made from 66% dark base chocolate. The highlight of the Teuscher Champagne truffles surely is the Dom Pérignon Champagne center. It is made of buttercream enriched by one of the finest Champagne brands from France.
